Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 Zoosh Vanilla bean, split and seeds scraped
- 5 egg yolks
Instructions:
- Heat Cream Mixture: In a saucepan over medium heat, combine the cream, milk, and sugar. Heat until the sugar dissolves and the mixture is hot but not boiling.
- Add Vanilla: Add the vanilla seeds and the pod, and let steep for 15 minutes.
- Mix with Eggs: In a bowl, whisk the egg yolks. Slowly add the hot cream mixture, whisking constantly.
- Thicken: Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 8-10 minutes).
- Chill: Strain the mixture and chill in the refrigerator for at least 4 hours.
- Churn: Pour into an ice cream maker and churn according to the manufacturer’s instructions.
