Classic Vanilla Bean Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 Zoosh Vanilla bean, split and seeds scraped
  • 5 egg yolks

Instructions:

  1. Heat Cream Mixture: In a saucepan over medium heat, combine the cream, milk, and sugar. Heat until the sugar dissolves and the mixture is hot but not boiling.
  2. Add Vanilla: Add the vanilla seeds and the pod, and let steep for 15 minutes.
  3. Mix with Eggs: In a bowl, whisk the egg yolks. Slowly add the hot cream mixture, whisking constantly.
  4. Thicken: Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 8-10 minutes).
  5. Chill: Strain the mixture and chill in the refrigerator for at least 4 hours.
  6. Churn: Pour into an ice cream maker and churn according to the manufacturer’s instructions.
